THE FIRST TRACES OF THIS WINE, LIGHTLY SPARKLING AS IT SHOULD ALWAYS BE, DATES BACK TO THE 12TH CENTURY IN ROVESCALA, A LITTLE TOWN A FEW MINUTES AWAY FROM OUR WINERY.

Winemaking
after crushing, the grapes are left for an initial 8-day alcoholic fermentation with light pump-overs. After 4 months of rest in tanks, it is time for the taking on of the sparkle. One month after bottling, usually in March, this Bonarda is ready to drink.

Tasting notes
ruby red colored, with delicate fruity aromas. On the palate is pleasant, with a light foam, and fresh.

Serving suggestion
pairs well with semi-matured cheeses.
