AT THE FOOT OF THE GAIASCHI ESTATE, A ROAD DESCENDS SLOWLY TO THE RIO VOLTO, SKIRTING THIS PRECIOUS VINEYARD WHERE THE OLD ROWS OF CABERNET SAUVIGNON CHASE IN THE SUN. Winemaking
After picking and crushing, overripe grapes undergo a 25-day alcoholic fermentation with light pumpovers. The wine is then racked off, separating it from the lees. After resting for two years inside large, Slavonian oak barrels and at least six months in the bottle, it’s ready for serving.

Tasting notes
Deep, ruby-red colored with shades of garnet. Intense on the nose, with layers of ripe red fruit, straw, and chocolate. Warm and smooth in the mouth, full-bodied and with an elegant tannin.

Pairing
Best served with steak, roasted meats, or mature cheese.
