THE LIGHTLY SPARKLING WINE OF OUR TRADITION OWES ITS NAME TO GUTTURNIUM, A BIG SILVER DECANTER USED BY ROMANS FOR DRINKING WINE DURING FEASTS.

Type: lightly sparkling wine

Grape varietals: 60% Barbera 40% Bonarda

Yield: 70 hl per hectare

Estates: Colombaia Guffanti and Casa Mascandola – Ziano Piacentino

Extension and altitude: 10 hectares – 240-320 m elevation

Cultivation system: single curtain

Harvest: September – October

Alcohol: 12,5% vol.

Serving temperature: 14 – 16 °C


Winemaking
grapes of Bonarda and Barbera, picked between September and October, are crushed together and then undergo the fermentation process in stainless steel, temperature-controlled tanks for 8 days. After 6 months of ageing, it is then time for a natural re-fermentation with indigenous yeasts, and then for bottling.

Tasting notes
it has a ruby red vivid color, with a light foam. On the nose recalls red berries. Fresh and pleasant on the palate, with a good tannin and body.

Serving suggestion
best served with semi-matured cheeses and white meat.
